I make a QR-kiosk loyalty tool. That means I am biased. This piece is my honest take on when each of the three common patterns wins - including when a paper card beats my product.

Paper punch cards

Pattern: physical card, one stamp per visit, tenth stamp = free thing. Lives in the client's wallet, at least for a while.

Dedicated loyalty apps

Pattern: your client downloads an app on their phone, they scan a QR or tap a NFC tag, they see their points inside the app.

QR kiosk (fidel.club and its cousins)

Pattern: a QR on your tablet or a laminated poster near the till. Client scans with their phone camera. First time, they enter name + phone. Every time after, they tap check-in. Owner sees everything in a dashboard.
